The Power of Mise-en-Place


This wonderful piece, originally aired on NPR's Morning Edition, describes the military-like organization, precision, and discipline that reigns in the prep-kitchen. This bit was particularly resonant:

"...practiced at its highest level, mise-en-place says that time is precious. Resources are precious. Space is precious. Your self-respect and the respect of others are precious. Use them wisely. Isn't that a philosophy for our time?"

Certainly a philosophy for this Monday morning, as we continue to be awed by the work ethic of our back-of-house team that results in two busy shifts a day, seven days a week, with consistently stellar offerings. Cheers!
